During 26-27 August 2018, the Royal Thai Embassy in Copenhagen, in collaboration with the MAD Foundation, has organized a visit to Copenhagen of Ms. Supinya Chansuta, also known as “Jay Fai”, chef and owner of Ran Jai Fai, the first and only Thai street food restaurant awarded a Michelin star. “Jay Fai” participated in the 6th MAD Symposium in Copenhagen where she demonstrated how to make her famed “crab omelette” on stage during the opening session of the Symposium.
MAD Symposium brings people in the food and restaurant industry from all over the world for two-day conversation and learning. In its 6th iteration this year, the theme of the Symposium is “voice, leadership, inclusivity and expanding opportunities for all”. Jay Fai was chosen by Chef Rene Redzepi, owner of the Noma Restaurant, which was ranked as the world’s number one 4 times by the World’s 50 Best Restaurant awards, and Founder of the MAD Foundation to be an opening act in this year’s Symposium to honour her as a chef and businesswoman as well as to pay tribute to the role street food plays in Thailand and world culinary culture.
By having Jay Fai to participate in the Symposium, the Royal Thai Embassy helped to promote Thai entrepreneurs in an international arena, which in turn will highlight and raise better awareness about Thai food and tourism especially to attract more tourists to the street food scene in Thailand. The MAD Symposium was attended by 600 participants from 58 countries across the world.
